Healthy Taco Pasta Bake

This meal is great for meal prep or for an easy dump dinner if you’re in a pinch.

Low sodium? Only use HALF of the taco seasoning packet.

Ingredients

1 box Banza Chickpea Rotini

1 lb Lean Ground Beef

1 10 oz Can Rotel with Green Chile

1 packet taco seasoning

1 packet ranch seasoning

1 15.5 oz Can Black Beans (Drain if you want a thicker pasta)

  1. Preheat oven to 400 F.

  2. Cook Chickpea pasta according to box instructions. Drain water, keep drained pasta in pot. You will combine everything in this pot at the end.

  3. Brown ground beef in pan until there is no pink.

  4. Turn beef pan to low. Add Rotel, beans (drained for thicker pasta, I prefer undrained), ranch packet and taco packet. Combine and let simmer on low heat.

  5. Add meat mixture to pasta and fold together until combined.

  6. Put mixture into a 9x9 pan. Cover top with cheese and bake for 15-20 minutes until cheese is melted.

  7. Let rest for ~10 minutes and serve with sour cream.
