Quick and Easy European Pasta

This is my go to meal for when Mitch has a bad day at work. It’s his favorite, and it is super easy!

Quick and Easy European Pasta

Yield: 4 // Time: 20 minutes

Ingredients:

1 1/2 lbs. mini penne pasta  -or- 1 Spaghetti Squash

1/2 onion, chopped
1 clove garlic, minced
1 lb. ground sausage (We buy the hot kind)

Salt and pepper to taste 

1 can tomato paste
1 pint half and half cream
1 box chopped spinach, cooked 

Parmesan cheese (For topping)

Directions:

  1. Boil pasta per box directions until al dente - or - bake spaghetti squash.

  2. Sauté onion and garlic in small amount of oil until translucent, or soft on medium-high heat.

  3. Add sausage. Cook until well done. Add salt and pepper.

  4. Stir tomato paste into sausage and slowly add half and half. Stir until well blended and heated through. Do not boil.

  5. In the meantime, cook spinach per directions. Serve noodles or squash ladled with sausage/cream mixture. Top with hot spinach, to taste. Sprinkle with Parmesan cheese.
