Lemon Garlic Spaghetti Squash

I recently started 80 Day Obsession and have been on the meal plan. It's time I get creative with these portioned out with the portioned containers. This is a great meal if you are trying to watch your waistline. Below I have two ways to prepare this meal. One for those on a Beachbody meal plan (myself) and one for those like my husband who needs a little more.

This meal requires a baked spaghetti squash. My favorite way to bake spaghetti squash is in my Instant Pot. Directions on that can be found here.

If on 80-Day Obsession or 21-Day Fix

1 teaspoon olive oil

1/4 Spaghetti Squash (Baked)

1/4 cup spinach

2 cloves garlic 

1/4 cup sliced mushrooms

2/3 Cup Rotisserie Chicken

1/2 lemon

*Note: this is one serving for Plan A and can be adjusted as needed.

*One green, one red, 1 tsp.

Directions:

1. Saute olive oil, garlic, 1/4 cup mushrooms and 1/4 cup spinach until spinach is wilted.

2. Add 1/2 cup prepared spaghetti squash and 2/3 cup rotisserie chicken. Squeeze one half of a lemon into the dish. Stir together for one minute or until all is warm. 

3. Serve while warm.  

Normal Instructions if You are Not doing 80-day Obsession * 

Yield: 2 people

What you need:

2 Tablespoons butter

2 Tablespoons Parmesan Cheese

1 half Spaghetti Squash (Baked)

1 cup spinach

2 cloves garlic 

1/2 cup sliced mushrooms

1 Cup Rotisserie Chicken

1/2 lemon

Directions:

1. Saute butter, garlic, 1/2 cup mushrooms and 1 cup spinach until spinach is wilted.

2. Add 1/2 prepared spaghetti squash and 1 cup rotisserie chicken. Squeeze one half of a lemon into the dish. Stir together for one minute or until all is warm. 

3. Serve while warm. Bread it a great accompaniment.
