EASY Peach Cobbler

Recently someone from our church posted a picture of a FULL tub of peaches on Facebook. Peaches are a Fisher favorite. Mitch dreams about Chik-Fil-A's peach shakes year round. Scrambling to see how I could get my hands on some of those freshly picked peaches, I texted Mitch and pleaded him to stop whatever he was doing to go get us some. It didn't take much to get him there.
Three days later I have a bag full of ripe peaches with no plans for them, so I decided I would try to make my first cobbler EVER. I turned to Pinterest and combined a couple of my favorite recipes (Thank you All Recipes and Life in the Lofthouse) It was actually way easier than I thought it would be. The longest part of the process was peeling and slicing the peaches.
PS: The best part of this recipe is that you do not need to boil the peaches or other fruit like most cobblers.
Prep time: 10-15 Minutes // Baking time: 35-40 minutes // Yield: 8-10
Ingredients:
2-2 1/2 cups peeled, sliced peaches (canned or fresh)
- 2 Tablespoons & 1 cup sugar, divided
- ½ cup butter, room temperature
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- a pinch of salt
- a pinch of cinnamon
- 1 egg
- 1 teaspoon vanilla extract
Directions:
- Preheat oven to 350 degrees F. and grease a 9x13 pan.
- If using fresh peaches, peel skins and cut into slices. Arrange peach slices into a flat layer in the greased pan. Sprinkle peaches with 2 Tablespoons of sugar.
- Using a stand mixer or hand mixer, cream 1/2 cup room temperature butter and 1 cup sugar. Add flour, baking powder, salt, vanilla and optional cinnamon. It will turn into a similar consistency to pie crust or cookie dough.
- Spread dough evenly over the peaches. Try to make it as evenly as possible. Note: It will not cover the peaches completely when it is raw. It will spread and rise while baking.
- Bake in oven for 35-45 minutes or until golden brown. Let cool for about 10 minutes and pair with your favorite ice cream.
