Instant Pot Spaghetti Squash
Who else is a big spaghetti squash fan? I definitely am! It can be paired with marinara sauce, alfredo sauce or a nice lemon sauce. Though it still has some carbs, it is way better for you than classic pasta. Low in calories and keto/gluten/80 Day Obsession friendly.
If you have an Instant Pot, this is a no-brainer. It couldn't be any simpler.
You need:
1 Spaghetti Squash
1 Instant Pot
1 cup of water
Directions:
1. Place steamer rack in instant pot. Set Instant Pot to high pressure for 15 minutes.
2. Puncture the squash with about a dozen holes. Put in the Instant Pot.
3. Pour one cup of water in the pot, put the lid on and wait the 15+ minutes out. Let the pressure release then take off the lid. Wait about 15 minutes for your squash to cool. Cut the ends off (about a half inch) then cut length-wise, scrape out the seeds and dark yellow top layer.
4. Enjoy your squash! Pair it with some protein, a yummy sauce and another vegetable.
