Loaded Chili Sweet Potato

I received a recipe similar to this from Hello Fresh, a meal delivery service which I highly recommend! This recipe is yielded for four people, but I have it and make it for two.

Ingredients:

2 Long Green Pepper (I use Anaheim peppers)

4 Green Onion Sprigs (Typically one bunch at the grocery store)

4 Garlic Cloves

4 Sweet Potatoes

1 Pound Ground Beef

2 Tablespoon Taco Seasoning

1.5 ounce Tomato Paste

2 unit Beef Bouillon dissolved in 1 cup water

4 Tablespoon Sour Cream

2 teaspoon Cholula or Frank’s Wing Sauce

1/2 cup shredded Monterey Jack Cheese

Olive Oil

1 Tablespoon Butter

Instructions:

  1. Wash and dry produce. Deseed the green pepper and slice it into 1/2-inch chunks. Mince the garlic and slice or cut the green onion separating the white onions from the green onions.

  2. Poke sweet potatoes with fork and microwave for 6-10 minutes flipping them with tongs halfway in between. If it isn’t tender, microwave in 1-minute increments until done.

  3. Heat drizzle of olive oil over medium heat and saute white scallions (green onions), garlic and pepper for 4-5 minutes or until soft. Stir continuously so it doesn’t burn. Add ground beef and taco seasoning. Cook until beef is brown all the way through, roughly 3-4 minutes.

  4. Add tomato paste to meat and stir in (In the pictures below, I forgot tomato paste :( So just use your imagination). Then add beef bouillon + water mixture OR beef bouillon paste with 1/2 cup water. Simmer on low heat until thickened.

  5. Slice open sweet potatoes, pat with butter and mash together with a fork.

  6. Combine hot sauce and sour cream. Add 1 teaspoon of water at a time until the consistency can be “drizzled.”

  7. Load each potato evenly with chili, cheese, and green scallions (green onions). Top with sour cream/hot sauce.
